[CLI] CLI does not write a foundry.core{YYYYMMDD}.log file

Problem

The CLI does not write any foundry.core logs, which makes debugging issues hard. The foundrylocald-{YYYY}-{MM}-{DD}.log only stores INFO logs and there is not a way to have a debug mode on.
