What happened
This could be intentional (as it does say window size, and not render resolution), or for performance, and is semi-related to issue #2 that I created, which window size changes do in fact take place now, however the game itself does not render at said resolution. For example, if in the launcher I choose 4K resolution, the window itself is 3840x2160, but the game itself does not render it as that, and the game always renders everything at 720p, whether that be models, worlds, text, etc. Pressing F4 and going to the display tab shows the "4K, 1080p, etc." value, but the video resolution parameters stay at 1280x720. Changing these settings, saving the config and rebooting the game also has no effect on the render resolution.
