Unlink private Studio and Ensemble repositories from the README - #117

The ecosystem footer linked https://github.com/Cratis/Studio and https://github.com/Cratis/Ensemble, both of which return 404 for readers because the repositories are not public. Every other public README and the organization profile keep Studio and Ensemble as plain text until they are public; this aligns the footer with that convention.
