Replace unsafe `echo "$(sed ...)" > $FILE` with atomic temp-file write. The current pattern reads a file with sed inside a command substitution, then writes the result back via echo redirection. If sed reads an empty or momentarily unreadable file (e.g., NFS transient issue during container recreation by Watchtower or similar tools), it produces no output. The echo then writes exactly 1 byte (a newline) to the config file, silently destroying its contents. The fix writes sed output to a temp file first, checks it's non-empty with `[ -s ]`, then atomically replaces the original via `mv`. If sed produces empty output, the original file is preserved and a warning is logged to stderr.

Ran an in-place update from the latest official image to the image from this PR on a small instance with a few default proxy hosts (ie. no advanced configurations); also happy to report all good so far. Can test the update with a larger instance that includes some more complicated configurations later today. I did not test anything related to DNS or certificate generation. |

I also ran an in-place upgrade from 2.14.0 to the image linked above. After manually renewing a certificate from the certificates tab, the name of the certificate disappears from that same tab. It goes through with the renewal and seemingly works as intented, but nameless on the certificates page. The name still shows in the dropdown of the host. Confirmed on two different instances. This does not happen in 2.14
