- Introduces `omitFields` on the query request so callers can ask the
  API to drop heavy fields (e.g. `text`, `fts`) from returned docs
  server-side, avoiding a round-trip download of data the caller never
  reads. `validateQuery` protects fields the server itself reads
  post-find (`_id`, `type`, `updatedTimeUtc`, `status`, `expiryDate`).
- `HybridQuery`'s `stripFields` option now forwards as `omitFields`
  automatically (unless `persistOffline` needs the full doc for
  IndexedDB), turning an in-memory strip into a wire-level saving.
- Makes the API's Brotli compression quality configurable via
  `COMPRESS_BROTLI_QUALITY` (default 6), since the plugin's default of
  4 is below the size/CPU knee for typical /query response bodies.
