This PR simplifies the process of running the backend with:

  • one Docker container running a GeoServer instance
  • one Docker container (base: Ubuntu 24.04 LTS) running the CoRE Stack backend

on non-linux systems/for users who wish to run completely containerized backends.

The installation/install-docker.sh installs the backend in the running Docker container and does not interact with the installation/install.sh script in any way.

A complete set of instructions are present in the run-lulc-docker-instructions.md file at the root of the repository for setting up and running an LULC pipeline from the initial step. This has been added as a sanity check for the Docker containers set up and can be merged into other existing documentation/expanded later.
