Record uploading state for 0.3.120 assets

Records the reviewed planned-to-uploading transition for the exact 31 additions already present in development-only release 0.3.120.

• fills only observed destination asset identity fields
• commits immutable final 97-asset snapshot 85d65fcf... and rotates the current pointer
• preserves the 66 prior catalog rows and stable index byte-for-byte
• updates synthetic fixtures for the rotated current baseline

Validation: catalog gate passed; Docker suite reached 40/43 before the final synthetic timestamp correction, then all three affected focused tests passed. D3 independent audit is PASS/0. No release mutation or payload read-back occurs in this PR.
