The star history chart was broken because the GitHub stargazer API is no longer accessible without a token. Switch to a drop-in alternative so the chart renders again for everyone.

The Star History chart in the README was broken due to GitHub stargazer API restrictions. This updates the chart to use a working data source so the chart renders correctly again.
