   Kubernetes version inversion in upgrade test

   The automated bump changed installerSpec.kubernetes.version from "1.25.x" to "1.31.x" for the "Upgrade from 1.9.11" test, but the corresponding upgradeSpec.kubernetes.version is still "1.26.x". This means the test would install on k8s 1.31 and then attempt to "upgrade" to k8s 1.26, which is a Kubernetes downgrade and is not supported. The test will either fail outright or no longer validate what it's intended to validate. The same problem exists in the "Upgrade from 1.12.x" test (installerSpec bumped to 1.31.x, upgradeSpec still at 1.30.x).
